Walnut, white beans and asparagus salad

  • ¾ cups Red onion, finely chopped
  • 3 Celery stalks, copped
  • 1 cups Green Asparagus, cut
  • 2 cups Baby greens, mixed
  • 2 Tablespoons chopped parsley
  • ½ cup Lemon juice or lime juice
  • ½ cup Walnuts, chopped
  • 50 ml Parmesan shavings
  • 200g White beans, drained Salt and pepper to taste.
  1. In a large salad bowl, gently toss the onion, celery, walnuts, asparagus, tomatoes, parsley and baby greens.
  2. Add the lemon juice and olive oil and beans.
  3. Add the Parmesan shavings and salt and pepper to taste.
  4. Garnish with lemon and serve with green melon salsa
