Spinach, broccoli & celery soup

  • 1kg Spinach leaves, chopped and Broccoli
  • 200g Celery, copped
  • 25ml Salt
  • 4ml Pepper
  • 2 Onion, finely chopped
  • 2 Garlic clove, crushed, Pinch of cloves
  • 2L Chicken stock
  • 1L Fat free milk
  • 20g Cornstarch
Instructions
  1. Cook the spinach, celery, onion, garlic and broth together for 10 minutes. Add cloves, salt and pepper and simmer for 5 minutes.
  2. Add the Cornstarch to the milk and blend well. Add the milk mixture to the spinach and stir well. Liquidize and serve with Greek yoghurt.
