  • 6 fresh tomatoes, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp. lemon juice
  • 0.25 cup fresh cilantro, minced
  • 1 tsp. ground cumin
  • 1 pinch black pepper, freshly ground

    • Onion

    Arrange the cucumber and tomato slices in overlapping circles on a large serving platter.

    In a measuring cup, whisk together the oil, lemon juice, cilantro, cumin, and pepper.

    Add the dressing to the cucumber and tomato salad.

    Cover and refrigerate until ready to serve.

    You can add bell peppers and onions for more of a salad.
