  • 1 cup vegetable oil
  • 3 large eggs
  • 1.5 cups of course ground almond flour
  • 1/2 cup of flax seed meal
  • 1 tsp baking soda
  • 1 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1 tsp of vanilla extract
  • 3 cups of medium shredded carrot
  • Method

    Preheat the oven to 180 ÂșC

    Grease your baking tin

    Mix the sugar, oil and eggs together. Add the rest of the ingredients one at a time mixing all the time.

    Cook for 30 mins (to test if it is cooked pierce the centre with a knife and if it comes out clean its done)

    Cool in the tin
